Christmas Cookies



I'm starting to get into the Christmas spirit - had my 1st mince pie today!
I also made some delish christmas cookies yesterday so for anyone who wants it - heres the recipe. I adapted the recipe from a choc and pecan one i found somewhere online. The resulting cookie is nice and moist with a slightly spicy kick - i wanted a subtle taste but if you like it spicy add more ginger - *WARNING* - very addictive and not for anyone on a diet!!!!!

Christmas cookies

1 Cup Sugar
1/3 cup brown sugar
1/2 cup cocoa
1 cup mixed chop nuts, fruit and dark chocolate chunks
1 3/4 cup plain flour
1 tsp baking soda
1/2 tsp cinnamon
1/4 tsp ginger
1/2 cup butter
1 egg, lightly beaten
1 tsp vanilla
Few drops orange essence

Mix together dry ingredients.
Using hands rub in butter, egg, vanilla and orange to form a dough.
Shape into balls the size of walnuts and put on a lined tray 5cm apart.
Bake at 375 F for 10-12mins.
The outside should be set but cookies will still feel soft.

*Makes approx. 30 cookies*

I used walnuts, macadamias, apricot and pineapple pieces in mine (cos thats what was in the cupboard!!!) But i reckon cranberries, apple and macadamias would be great. Enjoy!! And i accept no responsibility for any weight gained as a result for eating these!!!
